Woven Pizza Bread // Weaving Tides

I don’t have much to say today, because this is one of my extended videos, where I'm actually talking. So I'll save on written text and let you enjoy the spoken stuff. Without further ado, feast your eyes on my newest recipe and the game that inspired it.

Weaving Tides is an Austrian indie titles that is, as the name suggests, all about weaving - fighting, solving puzzles and even repairing the fabric of the world. It was created by only four people over the span of four years and it's delightful. So obviously the food I came up with had to be on an equal level of fun. What I came up with is a woven bread full over summery, pizza-y flavours, perfect for your next BBQ.

500g Flour (4x125g)

300g Water (4x75g)

10g Salt

7g Dry Yeast

10g Fresh Basil

75g Pitted, Black Olives

50g Dried Tomatoes

15g Tomato Paste

3 Cloves of Garlic (~15g)

  • blend 25g olives with 75g lukewarm water

  • mix the tomato paste with 75g of lukewarm water

  • blend half of the basil with 75g of lukewarm water

  • prepare another 75g of lukewarm water

  • add the liquids to four bowls

  • add 1/4 of the yeast, 1/4 of the salt and 125g of flour to each one

  • combine the ingredients and thoroughly knead the yeast dough for a few minutes

  • form a ball of dough, put it back in the bowl and dust it with flour

  • cover the bowl with a clean kitchen towel

  • repeat the dough preparation with the other three prepared liquids

  • let the four yeast doughs rise in a warm place for about 1 hour

  • peel the garlic cloves and cut them into small pieces

  • cut the sun-dried tomatoes into fine strips or pieces

  • quarter the olives or cut them into rings

  • preheats the oven to 250C degrees top/bottom heat

  • add the garlic to the normal dough and knead everything well

  • put the tomatoes in the red dough and knead everything well

  • put the basil in the green dough and knead everything well

  • put the olives in the brown dough and knead everything well

  • flour your work surface

  • halve the dough balls and form a ~ 30cm long dough strand out of each half

  • line a baking sheet with parchment paper

  • place one strand of each flavor on the baking sheet

  • interweave the other four strands with the ones in front of you

  • take a look at the video above, if you don't know how to do it;)

  • brush the resulting woven bread with oil

  • push the tray onto the middle rack of the oven

  • pour a glass of water on the hot oven floor

  • reduce the temperature to 230C degrees and bake the bread for 20-25 minutes

  • take the bread out of the oven when it is lightly browned and crispy

  • Guten Hunger!
